Corn and cheese bites are a delicious and quick option, perfect for sharing at family gatherings or picnics. This easy version can be prepared in just 35 minutes.

In Argentina, these bites are a common addition to birthday celebrations, gatherings with friends, or impromptu snacks. The combination of corn and cheese is especially popular for its mild and creamy flavor, making it a favorite among both adults and children.

Corn and cheese bites are small individual tarts made with pie crusts and filled with a creamy mixture of corn kernels and soft cheeses. They are baked in the oven until the crust is golden and the filling is bubbling.

Ingredients:

12 pie crusts for baking
1 can of corn kernels (approx. 300 gr) or 2 cups of cooked corn
150 gr of cream cheese (can be mozzarella, block, or port salut)
2 tablespoons of grated cheese (type reggianito or sardo)
1 small onion
2 tablespoons of butter
2 tablespoons of heavy cream (optional, for extra creaminess)
Salt and pepper to taste
1 egg (for brushing)

Instructions:

1. Preheat the oven to 200 °C.
2. Finely chop the onion and sauté it in the butter until transparent, but not browned.
3. Add the drained corn and sauté for 2 minutes. Season with salt and pepper to taste.
4. Remove from heat, let cool slightly, and add the cubed cream cheese, grated cheese, and heavy cream. Mix well.
5. Place the pie crusts in muffin or flan molds, forming baskets, and prick the bottom with a fork.
6. Fill each basket with the corn and cheese mixture, and brush the edges of the dough with beaten egg for even browning.
7. Bake for 20 minutes, or until golden and with bubbling filling. Do not overcook to prevent drying out.
8. Remove from the oven, let cool for a few minutes, and unmold. Serve warm or at room temperature.

Servings: Makes 12 bites, which is equivalent to 4 to 6 servings, depending on appetite and if part of a snack spread.
