Preservation can be achieved through various techniques, including home pasteurization, which allows you to enjoy grapes during winter. A popular method for preserving both white and red grapes involves several steps that can be done at home. The process begins with washing the grape bunches and separating the grapes, which are placed in clean glass jars, making sure not to fill them to the brim to leave a safe space at the top.
To preserve the grapes, only water, sugar, and lemon juice are required. Two tablespoons of sugar and one tablespoon of lemon juice are added to each jar before filling it with water, ensuring that the grapes are completely covered. Once sealed with clean lids, the jars are submerged in a deep pot of water up to the height of the lids. When the water starts to boil, this temperature is maintained for 20 minutes to achieve proper pasteurization.
